High Vasatility helps player to adapt quickly when playing slightly out of position?

No, it just means you multiply the versatility rating as a % by each attribute if he is playing slightly out of position.

For example a winger has 80 speed and 70 versatility and he plays as a fullback, his speed will effectively be 70/100 * 80 = 56
