Team of lower assessment that beats a team with higher assessment means the lower team has a better advanced formation and tactics than the higher rated team. Yes you can play guys out of position but I believe it will negatively affect their training because of their morale but I'm not completely sure about all that you would have to look around through the threads and guides to figure that out.
